The term Kopi stands as the Indonesian word for coffee and Luwak is the local name of the Asian Palm Civet. The civets eat the raw red coffee berries but the beans inside pass through their system undigested. The raw red berries are considered part of a normal diet along with insects, small mammals, reptiles and more.

The original Kopi Luwak collected from the nature is usually in the form of Civet’s fesses, which is then run through exclusive and particular process so that top quality and authentic Kopi Luwak beans are produced.

In the process, the inner bean of the berry is not digested, but it has been proposed that enzymes deep in the stomach of the civet add to the coffee’s flavor by breaking down the proteins that give coffee its bitter taste.
